Apple Crisp

2 large or 3 medium apples

  1. Peel and slice the apples. Grease the microwave-safe pan with wood-pressed coconut oil.
  2. Add thinly sliced apples.
  3. Add 1 tbsp lemon juice and sprinkle 1 tsp cinnamon powder.
  4. Mix it with your hand and spread apples evenly in the pan.
  5. Pour half a cup of water over the apples and keep it aside.

For topping

  • 1/2 tsp nutmeg powder
  • 1/3 cup wood-pressed/cold-pressed coconut oil
  • 3/4 cup jaggery powder / brown cane sugar
  • 1 cup wheat flour
  • 2 pinches of pink Himalayan salt
  1. Put nutmeg powder, coconut oil, jaggery powder, wheat flour and salt in a bowl and mix them with your hand until you get a crumbly or coarse sand-like texture.
  2. Preheat the oven to 180 degrees Celsius.
  3. Sprinkle the prepared mixture over the apples and spread it evenly.
  4. Bake it in the oven for 35-40 minutes at 180 degrees Celsius.

Peanut butter ice cream

INGREDIENTS

  • 1 cup peanuts
  • 6 dates, seedless
  • 1⁄4 cup water
  • 4 frozen bananas
  • 1 tbsp peanut butter
  • 1⁄2 tablespoon powdered Jaggery
  • 1⁄8 teaspoon rock salt
  • 1 tablespoon almonds

*Take fully ripe bananas, peel, slice and put in the freezer for about 6 hours. 

*Soak 6 seedless dates in 1/4th cup water.

For making peanut butter

  1. Heat a pan, add the peanuts and reduce the flame to low.
  2. Roast peanuts while continuously stirring for 4-5 minutes.
  3. Transfer peanuts to a blender once they reach room temperature. Blend for 2-3 minutes till you get creamy butter. You will feel as if they’ll never blend, but be patient! Patience is the key! The peanuts will first convert into a powdered form before turning into butter. 

*Do not add any water.

For making peanut butter ice cream

  1. Place the soaked dates with water in a blender. Blend till a paste is formed.
  2. Add the frozen bananas, peanut butter, jaggery and salt to the date paste & blend again until smooth. Do not over-blend.
  3. Scoop out the ice cream into bowls. Top with chopped almonds and serve immediately for a scrumptious soft-serve!

Cheesecake

Cake base

  • 1.5 cup oats
  • 8 dates (remove seeds)
  • 1 cup walnut
  1. Blend oats, dates and walnuts in a blender.
  2. Take a cake tin and line the base with butter paper. Add the mixture to the cake tin and flatten it. 

For cream 

*Soak cashews in water for at least 1 hour

  • 2 cups of soaked cashews
  • 1/2 cup water
  • 1/4 cup honey/maple syrup
  • 1 tsp vanilla extract
  1. Blend soaked cashews, water, honey/maple syrup and vanilla extract into a fine paste. 
  2. Pour and spread 1/2 of the mixture on the cake base. Add 1/4th cup of blueberries to the other half. Blend it into a fine paste.
  3. Pour and spread this mixture on the top of your cheesecake.
  4. You can add your favourite toppings to your cheesecake. My personal favourite is blueberries! 
  5. After adding the toppings, keep your cheesecake in the freezer for 2 hours.

Stuffed dates

INGREDIENTS

  • 4 Medjool dates
  • 4 tsp raw almond butter
  • Dash of cinnamon
  • 4 whole almonds or cashews
  1. Cut the dates lengthwise and remove the pit.
  2. Stuff 1 tsp almond butter into each slit, letting it stick out the top a bit.
  3. Press an almond or cashew into the almond butter.
  4. To serve, arrange the dates on a plate and sprinkle a dash of cinnamon.

INGREDIENTS

  • 1 cup coconut/almond milk
  • 1.5 tablespoons of powdered jaggery
  • 1⁄2 ripe banana
  • 1⁄8 teaspoon rock salt

  • 1 cup of chopped mixed fruits

(such as bananas, grapes, kiwi, mango, pomegranate, berries)

  1. Place coconut milk, jaggery, banana and salt into a blender and blend until smooth.
  2. Pour this mixture over chia seeds and let them soak for about 2 hours on the kitchen counter. The chia seeds will swell up and thicken.
  3. Place the pudding in the refrigerator for 30 minutes before serving.

Toppings
